Origin of Laal Maas
Laal Maas is mainly known as a spicy lamb curry of Rajasthan but originally was prepared with wild boar, rabbit, or deer meat.
Legend says that once King of Mewar was served deer meat marinated with plain yogurt and garlic, the strong gamy odor persisted. The Mewar King (one of the erstwhile princes of Rajasthan) rejected the dish. Laal Maas was born after the cook raised the heat with Mathania chilies through trial and error.
Due to the ban on hunting in India today, the delicacy is cooked with goat meat instead of deer meat, but the ingredients remain the same.

The Rajasthani feast, which goes back to the tenth century, includes this meal. Rajputana monarchs, who loved to hunt and frequently went on lengthy expeditions and engaged in war, dominated this region.
State visitors were invited to Shikars for opulent hospitality.
There were attendants and Khansamas with the elephants and horse caravans (cooks) carrying water, spices, and raw food to the Rajputs and visitors. Deer, wild boars, and rabbits hunted around the area after the travelers set up camp. While hunting, the team was dispatched up front on horseback. The meat was marinated for hours and kept ready for savoring.

What led to the invention of Mohan Maas or Jungli Maas?
Two new recipes, Mohan Maas and Jungli Maas were developed exclusively for women during the hunting period. The Jungli Maas recipe is believed to have been created by the House of Samode.
Junglee Maas, Mohan Maas, and Laal Maas have many similarities but are dissimilar. Laal Maas main ingredient is Mathania Chilly, named after a region in Jodhpur.
